Thirsty Monk Brewery

We’re thrilled to open our doors in the Denver metro area, and meet our City Park West neighbors! Thirsty Monk operates a 12 barrel brewery in Denver’s Uptown, along “Restaurant Row,” and it serves as our production brewery. Head Brewer Brian Grace is based in Denver, and is brewing Thirsty Monk’s core, seasonal, specialty, and side-project beers there. He is also spearheading the creation of open fermentation, barrel aging and sour programs, based in North Carolina under his direction. Join us in our intimate and comfortable taproom, or out on the patio. We’ll be serving fresh-from-the-tanks pours of our Belgian Rooted Modern Ales, along with expertly paired Food Flights!
